Vegan pulled un-pork!


Mushroom pulled un-pork inspired by @mathildas.ca menu item. Chk out their delicious offerings!💛


Ingredients:


1 small onion sliced

1 lb shitake mushroom sliced thin

2 tsp Chili oil in black bean sauce (available in Asian grocery stores)

1 tbsp sundried tomatoes sliced thin

1 tbsp ginger minced

1 tbsp garlic minced

4 to 5 curry leaves

2 tsp sugar

1/4 tsp paprika

3 scoops tomato sauce (we used a homemade sauce)


Fry onions in coconut oil until softened and add in the mushrooms. Continue sautéing until the onions and mushrooms are softened. Add in fresh ginger, garlic, curry leaves and paprika. Sauté for about 5 mins and then add 2 tsp of sugar and keep frying to caramelize the mix. Ladle in 2-3 scoops of homemade tomato sauce and continue cooking until the sauce is reduced. Spoon the super flavorful caramelized mushroom pulled un-pork into your bun and enjoy!
