If you love to latch on to a great show & binge like me, "The Bear" is the show to watch - especially as a food lover.
In the final episode, Carmy (Jeremy Allen White) makes this simple yet delicious pasta recipe. I took a crack at it tonight for dinner and it was yummy!
2 28 oz cans of San Marzano tomatoes (I couldn't find them, so opted for canned whole tomatoes)
1 whole head of garlic, peeled
1 onion, cut into two halves
2 handful of basil
1 cup olive oil
1 tsp chili flakes
4 tbsp butter
1 pkg spaghetti
Cook pasta until just before al denté. In a saucepan, heat olive oil, add in garlic, chili flakes and basil with the leaves and stems. Cook on low heat until the basil is slightly wilted, not crispy. Remove the basil and add it to the blender. Allow the garlic, oil and chili flakes to cook for a few more minutes until garlic has softened. Add to blender and pureé.
In the same saucepan, add the butter and the two halfs of the onions face down. Allow the onions to caramelize a little. Add in the basil, garlic pureé and the canned tomatoes. Cook on low heat for 30 minutes or so breaking up the tomatoes occasionally. Add in pasta to the sauce and cook through until pasta is done and most of the liquid has evaporated. Serve with basil, parmesan and a slight drizzle of leftover basil, garlic pureé. It is simple, hearty and so so good!
