Pink tandoori rice & beans - pretty on a plate!

After the overindulgence this holiday season, my body was craving some rice & beans! Featuring a trini stewed beans with tandoori rice - simple and flavorful💕



Ingredients (trini stewed beans)

1 1/2 cups black eyed beans soaked overnight

3-4 cloves garlic crushed

1 tomato diced

1 onion diced

1 to 2 tbsp green seasoning

Optional: half a green pepper diced

Boil beans with garlic for about 45 mins. Throw out half the water and add in tomato, onion, green seasoning, salt, pepper and bit of sugar. Simmer until beans and seasonings have softened. Mush some of the beans using the back of the spoon to make it creamy.

Cook rice with salt, 1 tsp tandoori powder and a bit of butter. Serve beans over rice and enjoy!
