Inspired Khao Soi

Friday feelin' 🍾 - fusion Beef Khao Soi!


1 lb beef cubes

1 stick of lemon grass smashed to release flavor

3-4 cloves of garlic smashed

3 slices ginger

3/4 red curry paste

1/4 teaspoon madras curry powder

2 tbsp oil

1 1/2 cups creamed coconut

2 cans coconut milk

3 tbsp brown sugar

Fish sauce to taste


Thinly chopped green onions

Lemon wedges

Chili oil in black bean sauce (found in Asian grocery stores)

1. Mix red curry paste, madras curry powder and oil to form a khao soi paste.

2. In a saucepan, sauté garlic, ginger, lemongrass and khao soi paste for 1 - 2 mins. Pour in creamed coconut and coconut milk and cook for 1-2 mins until flavors are combined. Add in sugar, fishsauce and bring to a boil. Reduce heat to a simmer and add in meats. Cook for 30 - 45 minutes. Adjust sugar or fishsauce depending on how sweet or salty you like your khao soi.

3. Cook chowmein noodles to al denté, spoon into bowl and add in the soup. Garnish to your liking and enjoy!😊
