Hotpot - so yummy & fun!


Eating one of my fave comfort foods today - bone broth tomato hot pot base all made from scratch with my fave ingredients and dipping sauce. It sure was a labour of love and so worth it!💕


Ingredients for hotpot base:

4 finely diced tomatoes

4 cloves garlic smashed

2 shallots rough chop

3 slices ginger

2 bay leaves

1 star anise

1 cinnamon stick

2 tbsp tomato paste

2 tbsp sugar

1 tsp salt

1/2 lb pork bones, bone marrow, chicken neck


Method:

Boil pork bones, marrow and chicken in water (measure 1 to 4 parts water). Remove the film that floats to the top. Remove the bones, marrow and chicken from the pot and discard water. In a new pot, add in bones, marrow and chicken with fresh water and bring to a boil. Simmer on low for 3-4 hours.


In a separate pot, add oil and garlic, ginger, shallots, Cinnamon, bay leaf and star anise. Stir until flavors are released. Add in tomato paste and sauté for a few minutes. Add in tomatoes, sugar and salt, simmer until tomatoes have softened to a paste. Use the back of your spoon to break them up. Add in stock and bring to a boil.


Serve with your favorite ingredients and sauce: we used fish & shrimp balls, fried tofu, soybean puffs, Chinese cabbage, enoki mushrooms and sliced rib eye beef.


For the sauce: i make my fave...combine sesame paste, peanut butter, chili garlic paste, chopped cilantro and green onion, garlic, a little hot water and a raw egg combined. You can make your own sauce as & enjoy this interactive meal!😊
