Inspired by a few of @gordongram Gordon Ramsay's recipes this morning and created this simple lunch with our pantry items!
2 leeks chopped
6 cloves garlic chopped (set aside 2 chopped cloves)
1 tbsp chili flakes
A can sardines in oil
1 cup Breadcrumbs ( I cheated and used store bought crumbs)
1/2 tbsp butter
1. Cook pasta to al denté and save some of the pasta water
2. In a frying pan, add butter, 2 cloves of chopped garlic and toss until fragrant. Add in breadcrumbs and toss until golden brown. Season with black pepper and set aside.
3. In a sauce pan, add in the oil from the sardines. Toss in garlic, leeks and chili flakes and fry until leeks have softened. Chop up sardines and add to the mixture. Cook for 30 seconds to 1 minute. Ladle in pasta water to create a creamy texture and toss in with the pasta. Season with salt & pepper, serve into plates, garnish with breadcrumbs and voila! 😊
