Easy jerk chicken!


Its almost spring so we might as well do a lil bbq! Easy slow roasted jerk chicken with lemon pepper seasoned carrots & potatoes paired with jerk sauce & crèma. This combination of savory heat, mild sweetness and the coolness of the crèma sooo hit the spot!😍


Ingredients

5 to 6 Chicken legs and/or thighs

2 to 3 tbsp jerk seasoning (We used the Cool Runnings Jerk Seasoning )

1 to 2 tbsp olive oil

1 tbsp herb de provence (We tried the Spice Appeal brand and I like it!)

4-5 potatos diced

2 carrots diced

2 tbsp lemon pepper seasoning (So i've just started using this and its literally making it to all of my dishes lol - I used the Cool Runnings Lemon Pepper Seasoning)

4 cloves garlic diced

2 tsp butter


For the gravy:

Pan drippings from the jerk chicken with a little broth and a drizzle of honey

For the crema:

Sour cream with herb de provence


Method:

Season chicken with salt, pepper, jerk seasoning, olive oil and herb de provence. Roast on low fire on the bbq for 30 minutes. At the same time, saute potatoes and carrots in a bit of olive oil and lemon pepper seasoning. Turn down heat to low and cover for about 30 minutes. Add in garlic about half way through and toss every so often to avoid sticking to the pan. Add a touch of butter at the end. Serve with jerk sauce and crema. Super easy and sooo sooo flavorful!
