Happy long weekend beauties!!💜 Sharing some long weekend inspiration with a cookup rice chicken, beans, potato, onions cooked in coconut milk. Hearty & delicious!
1 chicken breast chopped to bite size pieces
5-6 potatoes diced
1 can of beans
4-5 garlic diced
1 onion sliced
1 1/2 cup parboiled rice (washed)
1 potspoon ketchup
1 1/2 tbsp tomato paste
3/4 can of coconut milk
salt and pepper to taste
Wash chicken in vinegar and water. Re-wash with water until it runs clear. Season chicken with salt, pepper, green seasoning, paprika and browning. Refrigerate for atleast 24 hours.
In a separate pan, saute garlic until fragrant. Add in chicken and toss for a few minutes until it starts to brown. Add in one sliced onion and saute until softened. Create a little well in the pot, and add in tomato paste and stir until it looks softened (20-30 seconds). Add diced potatoes and beans and stir all ingredients well. Add salt and pepper to taste. Add 4-5 cups of water to the pot, add in coconut milk and bring to a boil. Add in rice, a potspoon of ketchup and cook on low fire for 20 minutes or until rice has softened (adjust seasonings as needed). Serve and enjoy! :)
